Sweet Potato Beignets with Jack Daniels Dipping Sauce

Beignet Ingredients:

1 C. Cooked, Mashed Sweet Potatoes
½ C. Mascarpone Cheese
½ C. All-purpose Flour
1 Egg White
¼ C. Sugar
Pinch of Salt
¾ t. Baking Powder
¼ t. Vanilla Extract

Beignet Directions:

Combine all the ingredients in a mixer with a paddle attachment and mix until smooth.

Scoop ½ inch balls with melon baller and drop into deep fryer.

Cook until the Beignet is still a little gooey in the middle.

Cream Cheese
10X Sugar
Jack Daniels

Jack Daniels Dipping Sauce Directions:

Mix all ingredients together to taste. Beat until smooth.
