Mom’s Hot Water Sponge Cake

4 eggs (separated)
1 ½ cup flour (sifted)
1 ½ cup sugar
½ cup hot water
1 tsp vanilla
1/4 tsp salt
1 tsp baking powder

Beat egg whites with 2 tablespoons of the sugar and set aside.  Next, beat egg yokes with remaining sugar; then add the hot water.  Add flour with baking powder, salt, then vanilla and beat well. Then, fold in the egg whites.

Bake @ 350 for 25 minutes
