Heirloom Tomato Fresh Summer Salad with Lady Pea Salsa


 Heirloom Tomato Salad

4 lb. Heirloom Tomatoes

2  Kirby Cucumbers

1 Red Onion

3 Heads of Sweet Corn, Roasted

Basil Chiffonade

 Lady Pea Salsa

1 C Diced Nectarines

2 Seedless, Minced Jalapeno Peppers

1 T Sugar

2 t Orange Zest

3 T Extra Virgin Olive Oil

3 T Aged Balsamic

2 t Grated Ginger

2 C Cooked, Lady Peas

½ C Cilantro

1/3 C Diced, Red Onion


Lady Pea Salsa

In a large bowl, stir together the Nectarine, Minced Jalapeno Peppers, Sugar, Orange Zest, Extra Virgin Olive Oil, Aged Balsamic, and Grated Ginger. Let stand for 15 minutes.

Add Lady Peas, Cilantro and Diced Red Onions. Toss to coat all ingredients.

Heirloom Tomato Salad

Cut Heirloom Tomatoes into halves. Slice Cucumbers and Red Onion. Cut the Roasted Sweet Corn off of the Cobb. Add all four ingredients in a large bowl. Top with Lady Pea Salsa and garnish with Basil Chiffonade.
