12 Pieces of Chicken Drumsticks and Thighs

Large Potatoes



Extra Virgin Olive Oil


2 Whole Lemons

1 C. Chicken Stock


Preheat oven to 350 degrees. Wash and cut potatoes into chunks. Season the chicken and potatoes with a generous amount of salt and pepper. Toss in olive oil. Place chicken and potatoes in a roasting pan. Top with oregano and the juice from the lemons. Leave the lemons in the baking dish. Pour chicken stock over the top of dish. Bake for 45 minutes to an hour at 350 degrees.
