Tomatoes – 8 diced
2 Cups Cucumbers – Seeded and Diced
1 large Zucchini – barely grilled and diced
2 Red Bell Peppers – seeded, grilled, & diced
½ Cups Green Onion – chopped
½ Cups Kalamata Olives – sliced in half
½ Cup Chopped Basil
1/2 Cup chopped Cilantro
½ Cup chopped Parsley
1 Cup Feta Cheese (crumbled)
6 Tbsp Olive Oil
1 Cup Lemon Juice
2 Tbsp Cumin
Pita bread – grilled or toasted and broken into large pieces.
Combine all ingredients (except feta) in large bowl. Gently toss in the toasted pita. Toss and sprinkle feta over the top.
