After rehearsing their “I do’s,” Samford University sweethearts, Craig Kleimeyer and Matthew Culbreth, along with their family and friends, gathered at The Gardens Café by Kathy G for a rehearsal dinner. The beautiful seated, plated dinner was preceded by some Southern inspired, gourmet hors d’oeuvres. The hors d’oeuvres included mini BLT’s with Roma Tomato, Arugula and Apple Smoked Bacon, topped with Remoulade; and Warm Caramelized Onion and Goat Cheese Tarts.
The couple’s evening before the wedding dinner began with guests finding a surprise in their seats. Because neither Craig nor Matthew is from Birmingham, the majority of the rehearsal dinner guests were also from out of town. The couple decided to place bags filled with Southern/Alabama inspired treats in each seat. The bags held a bottle of Dreamland BBQ sauce; a State of Alabama shaped cookie with a heart drawn over Birmingham and a jar of local honey.
A Garden Salad of Mixed Lettuces with French Feta Cheese, Candied Walnuts, and Tomatoes topped with Red Wine Vinaigrette was the first of three courses. Rehearsal dinner guests were given a choice between three delectable entrees: Pan Seared Parmesan Crusted Chicken Breast, Pork Loin or Almond Crusted Tilapia all over Caramelized Onion Mashed Potatoes, Summer Vegetables and Classic Piccata Sauce with Lemon, Parsley and Capers.
Chicken Fingers, Mac n’ Cheese and a Fruit Cup were served to the kid attendees.
For dessert, place settings alternated between Flourless Chocolate Torte Garnished with Raspberry Coulis and Fresh Raspberries and Strawberry Tiramisu with Fresh Strawberries Coulis, Fresh Whipped Cream and a Strawberry Garnish.
