Triple Layer Strawberry Shortcake

A show-stopping strawberry shortcake perfect for summer!   Recipe from Driscoll’s Strawberries. Prep time: 30 minutes Cook time: 25 minutes Makes: 8 servings Shortcakes 10 tablespoons chilled unsalted butter, cut into small pieces plus more for pans 3 1/2 cups all-purpose flour 1/2 cup sugar 1 tablespoon baking powder 1 teaspoon baking soda 1/4 teaspoon salt 1 3/4 cups heavy cream Filling 1 1/2 packages (16 ounces each) Driscoll’s Strawberries, hulled and quartered 2 cups heavy cream 1 teaspoon vanilla extract 1/4 cup sugar Shortcakes Preheat oven to 375°F. Generously butter 3 (8-inch) round cake pans. Set aside. Combine flour, sugar, baking powder, baking soda and salt in bowl of a food processor or large bowl. Add butter and pulse in food processor or cut in with a pastry blender or 2 knives until mixture resembles coarse crumbs. Gradually add heavy cream and pulse in food processor (stirring with a fork several times to help distribute cream) or stir into bowl with a fork until just moistened (do not over mix). Gather dough into a large ball (if using food processor, first transfer mixture into large bowl) and gently knead on a lightly floured surface, just until smooth (about 5 turns). Divide dough into 3 equal portions and with hands, press each piece of dough into a prepared cake pan, spreading to edges and making as smooth as possible. Bake about 25 minutes or until top is golden. Let cool 5 minutes in pans on wire rack then turn out to cool completely on wire rack. Filling Combine heavy cream and vanilla extract in a mixing bowl and beat with an electric mixer on high until soft peaks form. Gradually add sugar while beating just until stiff peaks form. Keep refrigerated until ready to use. Assembly To serve, place first cake layer on serving plate and top with about 1/3 quartered strawberries in a single layer. Top with about 1/3 whipped cream and spread until even. Top with second cake layer and repeat with 1/3 quartered strawberries and 1/3 whipped cream. Top with final cake layer and spread remaining whipped cream in an even layer, leaving about 1-inch border around. Top with remaining quartered strawberries in a mound. Serve...

Strawberries & Basil Syrup

Strawberries & Basil Syrup

Ingredients 1 cup sugar 1 cup water 1/2 cup fresh basil leaves Directions Combine water and sugar in sauce pan. Boil for 5 minutes. Remove from stove . Add chopped fresh basil to simple syrup. Let cool 1 hour or put on fridge for 20 min . When ready to use, strain basil leaves and toss fresh strawberries in syrup.   May be used as dessert or topping on ice cream, pound cake or yogurt.

Courtney & Gary Wed at Rancho de las Aquilas

Kathy G & Company has the honor and privilege of being part of some of the most beautiful and amazing weddings in Birmingham, Alabama.  We would like to take this opportunity to highlight the Swaid & Mince wedding. Courtney Swaid and Gary Mince were married on Saturday March 23 at Rancho de las Aquilas.  Ranchos de las Aquilas is nestled on 45 acres with spectacular natural surroundings. The wedding party enjoyed the Alabama woodlands while overlooking the mountains that provided an extraordinary setting for this particularly unforgettable special event. Andy Hopper AIFD, with KG Designs, took care of all the flowers from the hand-made crystals in the bridesmaids bouquets and the brooch-studded arrangement for the bride, to the stunning centerpieces for the reception and the standing displays at the alter.  Andy really outdid himself.  Rancho de las Aquilas never looked so good. The bride’s “bling” queen style was reflected in everything from her gorgeous dress to the fabulous sequined gold and silver linens.  Courtney sparkled even more with the the beautiful diamond necklace that her father gave her.  As stunning as the bride was, you couldn’t help but notice the adorable flower girls in their feather skirts.  They looked like perfect little angels. After the ceremony, the guests enjoyed Middle-Eastern specialties with family-style service inspired by the bride’s Lebanese father.  The wedding party sat at the estate table while the other guests were seated at round tables in the dining room.  There was an extensive kitchen staff including chefs, sous chefs and cooks to prepare the amazing menu.  Olexa’s provided the stunning wedding cake and Kathy G provided the chocolate table. Stephen Clawson played acoustic music for the reception and Christy, Courtey’s father’s wife, played classical violin.  The photographer was Andrea Orr and we can’t wait to see final photos.
