Delicious Panini Recipes For Your Super Bowl Party

Back in September, Kathy G was a guest on NBC 13’s Daytime Alabama and did a cooking demonstration on fun panini sandwiches to make for better football game viewing. It was a super-popular segment and led to lots of folks asking Kathy to share more of her special recipes. “Panini” simply means sandwich in Italian, but here in the States, it refers to any pressed and grilled/toasted sandwich with delicious melted cheese.  The great thing about paninis are you can include any ingredients you desire, mix and match meats and cheeses in endless combinations, and make them different every time. Though brushing your sandwich with Extra Virgin olive oil isn’t mandatory, it certainly makes a good Panini great and turns a great Panini into a life-changing dining experience. Different types of bread will make different tasting sandwiches, but no single bread is inherently better than the other. It’s really all a matter of personal preference.  We love to use sliced rustic breads, crusty sourdough, French baguettes, Ciabatta, or traditional Italian loaves. Just make sure your meats, cheeses and veggies are sliced thinly. That’s truly the ONLY rule for a successful panini. Below are several of Kathy G’s panini recipes. Make sure to serve some up at your Super Bowl party this weekend and lets us know how it went! Turkey-Brie Panini Thinly Sliced Turkey Sliced Brie Candied bacon Lay the bacon on a cookie sheet and sprinkle with brown sugar.  Bake at 325 degrees until browned and crispy Cranberry Mayo In a food processor, pulse ¼ cup dried cranberries until finely chopped.  Add 1 cup mayonnaise and pulse 2-3 times. Roast Beef – Gorgonzola Panini Thinly Sliced Roast Beef Gorgonzola Cheese Onion Jam Over a medium flame, sweat 2 red onions with 1 tablespoon of butter.  Add 1 teaspoon of granulated sugar, ¼ cup of red wine vinegar and cook until tender. Prosciutto-Provolone Panini Prosciutto di Parma Roasted Red Peppers, julienned Provolone Cheese Pesto Mayo Combine 1/2 cup Mayonnaise with 1/2 cup prepared Pesto Vegetable Panini Assorted Grilled Veggies – Zucchini, squash, Red Onion, Peppers, Mushrooms Smoked Gouda Chipotle Mayo Add Chipotle Tabasco Sauce to 1 Cup Mayonnaise (to taste) Other Panini Ideas Turkey, Provolone, & Cranberry Sauce Roast Beef, Swiss Cheese, & Caramelized Onions Smoked Ham, Gruyere Cheese, & Grainy Mustard...

Jackie & Jason’s Gorgeous New Years Eve Wedding

What’s more fun and festive than New Years Eve?  Answer: New Years Eve Weddings! Over the past few years, more and more couples have elected to tie the knot on this most exciting of holidays!  Providing guests a combination of both an exciting New Year’s Eve party and romantic wedding, it’s truly the most romantic way to ring in the New Year. Jackie and Jason invited more than 260 friends and family to join them at St. Paul’s Cathedral for their New Years nuptials and to say the celebration was superb is an understatement of epic proportions. Andy Tolar of Design Productions set the room aglow in a spectacular shade of royal blue while Andy Hopper of KG Designs expertly handled all of the floral and decor for this most stunning holiday wedding. The menu was incredible from start to finish with many of Kathy G’s most popular stations including our famous “Shrimp & Grits” bar as wells as a “Comfort Station” which included a variety of Homemade Gourmet Grilled Cheese Sandwiches, Homemade Tomato Soup and Homemade Potato Leek Soup served in pilsner glasses. An “Asian Station” with Lime and Ginger Marinated Chicken Satays, Thai Flank Steak “Salad” with Scallion Creme and Toasted Peanuts in Phyllo Tarts, and Pork Spring Rolls with Ponzu Dipping Sauce were also part of the delicious offerings. It was truly a wonderful event and we’d be remiss if we didn’t mention all the wonderful wedding professionals who helped bring Jason and Jackie’s dream wedding to life.
