Laura & Chris, Park Lane Wedding Perfection

The gorgeous Laura and her dashing groom, Chris, were married at Briarwood Presbyterian Church before more than 300 friends and family members.  To make sure the playful couple’s big day was total perfection, Kathy G event coordinator Natalie Pilato-Andrews arranged for a truly over-the-top reception at Park Lane with one of the most impressive menus that our team created all year.  Chicken Kabob Skewers with Red Bell Peppers & Purple Onions was one of the event’s more popular Hors D’oeuvres with guests commenting time and time again how much they loved the Tzatziki dipping sauce. Spicy Boiled Shrimp with Cocktail & Tartar Sauce; Grilled Sliders with Cheddar, Dijon & Pickle; and Kathy G’s famous Mini BLT’s (pictured below) with Roma Tomato, Arugula, & Apple‑Smoked Bacon topped with Remoulade were also part of the couple’s fantastic feast. Also part of the gala were two of Kathy G’s most popular stations: a Mashed Potato Bar that offered up both Buttermilk Mashed Potatoes & Smashed New Potatoes served with Toppings of: Shredded Cheese, Sour Cream, Chives, Apple‑Smoked Bacon, Herb Butter, and Sauteed Mushrooms – All served in a fun & flirty Cosmo Glass. The second station was a sever-attended Carving Station providing Herb Crusted Beef Tenderloin with Sauces of Horseradish Creme, Whole Grain Mustard, & Caramelized Onion Jam. Barb’s Cakes, once again, did a wonderful job with the sweets for the affair while the team at Flower Buds made Park Lane look spectacular in every way. The good times extended well into the night with 300+ guests letting their hair down while mingling, dancing, and partying. We’re so thankful that Laura and Chris chose Kathy G & Company to be a part of their big day.  They are such a fantastic couple and the entire Kathy G & Company team wishes them nothing but the best.  May they live happily ever after.  ...

Paealla in a Pumpkin

INGREDIENTS 6 Chicken Thighs (with skin on) 2 Medium Chicken Breasts ¼ Cup extra-virgin olive oil 3 Tbsp Butter 2 Andouille Sausages (thickly sliced) 1 Spanish Onion (diced) 4 Garlic Cloves (crushed) 4 Red Bell Peppers (diced) 1 Celery Stalk (diced) Bunch Flat-Leaf Parsley Leaves (chopped, reserve some for garnish) 2 Cups Clam Juice 1 (15 oz) Can Whole Tomatoes (drained and hand crushed) 1 Dozen Mussels  (clams optional) 1 lb Jumbo Shrimp (peeled and de-veined) ¼ Cup White Wine Lemon Wedges  (for serving) Saffron Rice 4 Cups Short Grain White Rice 3 Cups Water (warm) 3 Cups Clam Juice Generous pinches of Saffron Threads Chicken Marinade (Rub) 1 Tbsp Sweet Paprika ½ Tsp Fresh Oregano 1 Tsp Fresh Parsley (finely minced) Kosher Salt and Freshly Ground Pepper (to taste) SERVING VESSELS 6 small Pumpkins (7-8” diameter)   DIRECTIONS: Hallow out six pumpkins and set aside. Rub herb marinade (sweet paprika, fresh oregano, fresh parsley, salt, and pepper) on chicken and roast at 400 degrees for 20 minutes or until done. Let cool and shred or chop chicken. Cook saffron rice separately on stove. Boil water and clam juice, add rice and cook until al dente. Then add saffron until the rice is yellow. In large pan heat olive oil; make a sofrito by sautéing the onions, garlic, red pepper, celery, and garlic. Cook for 2-3 minutes on medium heat. Add andouille sausage, chicken, shrimp, & mussels. Cook for 4 minutes and deglaze pan with ¼ Cup white wine and 2 Cups clam juice. Add saffron rice, cover, and let simmer 15 minutes. Add fresh herbs, butter, salt and pepper to taste. Dish into six small HOLLOWED-OUT PUMPKINS (6-7”) and serve with lemon...

Dreaming of Summer Weddings

All this blustery cold weather that Birmingham’s experienced the last few days has us dreaming of warmer days – Back to summer weddings and all their vibrant colors.  Earlier this year, wedding planner Meghan Cease of M Elizabeth Weddings and Events brought her cutest couple of 2011, Pam and Bill, to KG Designs and our own Andy Hopper created a stunning design for their July nuptials with linens of blue and summer florals of purple, orange, and pink. With a romantic ceremony at Trinity United Methodist Church and their reception at the Birmingham Museum of Art, Andy had two extraordinary venues to work with. Holiday Egg Nog Recipe: Kathy G’s Winter Wonderland

Today’s the day before Thanksgiving, so you know what that means… Tons of traffic on 31, 65, and 280 as everyone’s trying to get to grandma’s house AND, more importantly, it’s the official beginning of egg nog season!  Spread holiday cheer with Kathy G’s Winter Wonderland – Our fun and flavorful egg nog cocktail featuring sweet rich chocolate and delicious Amaretto.  This holiday drink recipe is so good, it’ll impress Scrooges of all shapes and sizes (so long as they’re at least 21). INGREDIENTS 1 Qt Chilled Eggnog* 8 oz Amaretto 4 oz Godiva Chocolate Liqueur OR Dark Crème de Cacao Sprinkle of Nutmeg (for garnish) *Please note that you can make your own, homemade egg nog for this recipe, but it’s not necessary – Just make sure you have at least one quart on hand. DIRECTIONS 1. Pour ½ oz Godiva Liqueur into bottom of glass. 2. In a large pitcher, whisk together the Eggnog and Amaretto. 3. Pour the Eggnog/Amaretto mix over Godiva. 4. NOW is the Time to Book Spring ’12 Weddings!

We are rapidly approaching prime engagement season.  According to a study by the Condé Nast Bridal Group, nearly 20% of all engagements take place over the holidays. To give you some perspective, that’s more than November and January COMBINED – And it far surpasses February, when marriage proposals are often tied to Valentine’s Day. What does all this mean?  Simply stated, if you’ve got your ring and you’d like to marry in the spring or summer of 2012, then you’d best lock in a venue BEFORE all the Christmas and New Years engagements take place. Whatever you do, DON’T  leave it ’til after the holiday season as your preferred date may be long gone! Judging by all the phone calls we’ve taken recently, many brides-to-be have learned from friends and relatives who were shut out from all the best dates during their planing process.  Andy Hopper at KG Designs has locked in several brides in just the last week or so and Kathy G event coordinator, Tamara Archer, says inquiries about May, June and July dates at the Gardens Cafe have really picked up since Halloween. What makes weddings at the Gardens Cafe so special, first and foremost, is its location at the pristine and serene Birmingham Botanical Gardens. Many couples choose to have an outdoor wedding ceremony – Ecxhanging their vows outdoors in one of the many gorgeous floral gardens. After saying “I Do,” the celebration moves over to the Gardens Cafe for a unique indoor/outdoor reception with up to 300 guests. Though not before posing for stunning wedding photos amongst the rich foliage and countless bright blossoms that are bursting with color throughout the spring and summer at the Botanical Gardens. Plus, the Gardens Cafe has a simply fantastic outdoor patio area that can be used for seating, mingling, and/or a fun dance floor – It’s all up to you.
