Caribbean-Themed Labor Day Party!

Kathy G & Company knows all cuisines – Italian, French, Asian, you name it!  So when Miss Loretta Floyd requested that we put together a fun menu for her Caribbean-themed Labor Day party – insisting that it be both fun and authentic – we were thrilled to take on the challenge!  Kathy G’s Keena Thompson handled the soiree – working with executive chef Jason Mezrano in putting together a phenomenal menu and managing the site from drop off through the last beat of the steel drums.The party was held at a private residence with the decor consisting of bright red, pink, and orange along with fun “island-inspired” palm frond umbrellas. But the real star of the occasion was the delicious menu –  Truly one the best we’ve created in all of 2011. Pan Seared Jerk Seasoned Beef Tender over Sweet Potato Yam with Pineapple Salsa & Mini Orange Muffins, Pulled Pork topped with Creme Fraiche & Pico de Gallo in Phyllo Tart Shelll, and Jerk Chicken Kabobs were just a few of the tasty offerings. Coconut Shrimp on Skewers, Coconut Scented Yellow Rice,  West Indies Crab Salad on Edible Asian Spoons on Rock Salt, Fried Plantains with Kathy G’s special homemade Salsa & Guacamole also proved to be big favorites with the nearly 50 guests in attendance. And then there was the dessert! No Caribbean party is complete without a display of Fresh Seasonal Island Fruit.  Playing into the theme, the fruit was presented with gorgeous Cabbage Flowers. Additional “tropical” sweets included  Key Lime Tarts, Coconut Pyramids Lemon Tarts, & Kiwi Squares.
